Francesco Cavallo, the well-known Florentine personality and owner of the Hotel Cellai has launched his first literary work, the cookbook "Cucina d'amore e libertà". His invitations in Florence are legendary, where he sometimes stands at the cooker himself.

He has now put his love of good cuisine on paper. The book is a connection between love, cuisine and poetry. For Francesco Cavallo, offering food is the very first act of love in the very first day of every human being's life. Food, Francesco elaborates, is the magical Pandora's box that hides the good and the evil of humanity.

He began cooking as a small child and discovered the kitchen as a place to express his feelings and stories. Only later came his love of words, languages, literatures and humour. For him, his cookbook is a synthesis of all these worlds. His first work was published by the Florentine publisher Mandragora and contains recipes with beautiful names like "Cooking Moonlight Risotto", "Cheek to Cheek", or "The Love of Cabbage". Francesco's recipes are illustrated by the illustrator and fashion designer Susanna Spelta. The book covers the preparation of delicacies as starters as well as "La prima audacia", reserved for first courses, and "Il piatto forte", which suggests main courses.

For Francesco Cavallo, it is not only the chemistry of the cuisine that is decisive but the atmosphere of the preparation. The reader also learns about the differences between the cuisine of love and the cuisine of freedom. The recipes proposed in the book take you to picturesque places, from Parisian boulevards to Spanish barrios, from the alleys of Naples to the bazaar of Damascus.

His Hotel Cellai and flats are appreciated by visitors to Florence for their décor of artwork and interior design and are often published in international design magazines. In the interview, Francesco also talks about his love of art and design and how to live a life of elegance and style.

Alethea&Art Magazine: How did you come up with the idea for this cookbook?

Francesco Cavallo: Cooking is a way of expressing thoughts, love and creativity. In my book the recipes are alibis for discussing about literature, semiotic, lifestyle, desire and seduction. The idea come during a conference I held time ago when I was discussing about men of love and men of freedom. 

Men of love adore plunging in warm bathtubs and meditate in silence and loneliness whilst their thoughts melt with the heat of the water. Men of freedom would better like strong and quick showers and restart their active life as soon as possible. During my talk I realized that there also could be a cuisine of love and a cuisine of freedom.

Alethea&Art Magazine: How important is the connection between love, cuisine and poetry to you?
Francesco Cavallo: Offering food is the very first act of love in our very first day of life and the biblical dispute about the forbidden apple was the original problem that the mankind had to face creating the basis for the idea of sin, which is of course the most powerful engine of the desire. Food is the magic Pandora box that hides the good and the evil of the mankind. Love, cuisine, poetry, literature but also pleasure, cruelty, desire, hate and fantasies are all nested on top of a white porcelain plate hidden in a forest of food and symbols.

All these ingredients are the ones that build relationships in between human beings. A kiss is fist of all a transmission of information and a way of feeding the other's need of love. 

Desire of feeding or being fed with words, caresses, looks, perfumes and visions are the strong links that create and animate love and pleasure.

Alethea&Art Magazine: Can you tell me about your respective inspirations by means of a recipe?
Francesco Cavallo: Each single recipe of the book hides meanings and symbols in his structure.  The choice of each single word and the position of each single comma has been attentively thought in order to create a sense of suspended sensuality.

Alethea&Art Magazine: How did your love of cooking begin?
Francesco Cavallo: I started cooking in my very first years and I discovered the cuisine as the most extraordinary way of telling stories.  Love for word, languages, literatures and sense of humor came after. This book is the synthesis of all these worlds.

Alethea&Art Magazine: How did your connection with the illustrator Susanna Spelta come about?
Francesco Cavallo: When we had to decide the way of printing and building the book we had several meetings with my publisher and the art director. 

I wanted my book to be illustrated by a woman that had a sophisticated mix of sensuality and sense of humor. We started browsing the websites of the best Italian book illustrators and the drawings of Susanna Spelta came in front of my eyes. 

I immediately fell in love for her way of reproducing tall, long legs sensual women hiding sensuality in elegant and spoiled gestures and dresses.
She was definitely the right illustrator.

Elegance and style are results of a path that never ends.

Alethea&Art Magazine: How important is it to you to live a life of style and elegance and how important are art and culture in your life?

Francesco Cavallo:  Elegance and style are results of a path that never ends.

Good taste, capacity of creating atmospheres, choosing the right shapes, chasing the perfect color and the perfect words is a mix of personal sensibility, knowledge and respect of the other.

The pleasure of living and offering an harmonic environment to the people I love sharing magic moments with is my strongest will. I don't know if elegance is important in my life but for sure the search of beauty, harmony and sense of humor are the keys of my existence.

Francesco Cavallo was born in Florence and still enjoys travelling the world's roads. He studied law, literature and foreign languages and is passionate about the languages of the world. 

He has always worked in the hospitality industry, runs his own business, collaborates on projects in Italy and abroad, and teaches marketing and management in the hospitality industry.

Francesco Cavallo, die bekannte florentinische Persönlichkeit und Besitzer des Hotel Cellai hat sein erstes literarisches Werk lanciert, das Kochbuch „Cucina d’amore e libertà“. Seine Einladungen in Florenz sind legendär, bei denen er auch manchmal selbst am Herd steht.

Seine Liebe zu guter Küche hat er nun zu Papier gebracht. Das Buch ist eine Verbindung zwischen Liebe, Küche und Poesie. Für Francesco Cavallo ist das Anbieten von Nahrung der allererste Akt der Liebe im allerersten Lebenstag eines jeden Menschen. Das Essen, so führt Francesco aus, ist die magische Büchse der Pandora, in der sich das Gute und das Böse der Menschheit verbergen.

Bereits als kleines Kind begann er zu kochen und entdeckte die Küche als Ort, seine Gefühle und Geschichten auszudrücken. Erst später kam seine Liebe zum Wort, zu Sprachen, Literaturen und zum Humor. Sein Kochbuch ist für ihn eine Synthese all dieser Welten. 

Sein erstes Werke ist im florentinischen Mandragora Verlag erschienen und enthält Rezepte mit wunderschönen Namen wie "Kochendes Mondscheinrisotto“, "Wange an Wange", oder "Die Liebe zum Kohl“. Illustriert werden Francescos Rezepte von der Illustratorin und Modedesignerin Susanna Spelta.

Das Buch behandelt die Zubereitung von Delikatessen als Vorspeisen sowie „La prima audacia“, reserviert für die ersten Gänge, und „Il piatto forte“, das Hauptgerichte vorschlägt.

Für Francesco Cavallo ist nicht nur die Chemie der Küche entscheidend sondern die Atmosphäre der Zubereitung. Der Leser lernt auch die Unterschiede der Küche der Liebe und der Küche der Freiheit kennen. 

Die im Buch vorgeschlagenen Rezepte entführen an malerische Orte, von Pariser Boulevards bis zu spanischen Barrios, von den Gassen Neapels bis zum Basar von Damaskus.

Sein Hotel Cellai und seine Apartments werden von Florenz Besuchern für ihre Ausstattung mit Kunstwerken und Interieur Design geschätzt und werden oft in internationalen Designzeitschriften publiziert. Im Interview spricht Francesco auch über seine Liebe zu Kunst und Design und wie man ein Leben in Eleganz und Stil führen kann.

Alethea&Art Magazine: Wie sind Sie auf die Idee zu diesem Kochbuch gekommen?
Francesco Cavallo: Kochen ist eine Möglichkeit, Gedanken, Liebe und Kreativität auszudrücken. In meinem Buch sind die Rezepte Alibis für Diskussionen über Literatur, Semiotik, Lebensstil, Begehren und Verführung. 

Die Idee dazu entstand während einer Konferenz, die ich vor einiger Zeit hielt, als ich über Männer der Liebe und Männer der Freiheit diskutierte. Männer der Liebe tauchen gerne in warme Badewannen und meditieren in Stille und Einsamkeit, während ihre Gedanken mit der Wärme des Wassers verschmelzen. 

Männer der Freiheit mögen lieber starke und schnelle Duschen und nehmen ihr aktives Leben so schnell wie möglich wieder auf. Während meines Vortrags wurde mir klar, dass es auch eine Küche der Liebe und eine Küche der Freiheit geben kann.

Alethea&Art Magazine: Wie wichtig ist für Sie die Verbindung zwischen Liebe, Küche und Poesie? 

Francesco Cavallo: Das Anbieten von Nahrung ist der allererste Akt der Liebe in unserem allerersten Lebenstag, und der biblische Streit um den verbotenen Apfel war das ursprüngliche Problem, mit dem die Menschheit konfrontiert war und das die Grundlage für die Idee der Sünde bildete, die natürlich der mächtigste Motor des Verlangens ist. 

Das Essen ist die magische Büchse der Pandora, in der sich das Gute und das Böse der Menschheit verbergen. Liebe, Kulinarik, Poesie, Literatur, aber auch Vergnügen, Grausamkeit, Begehren, Hass und Fantasien sind auf einem weißen Porzellanteller in einem Wald aus Lebensmitteln und Symbolen versteckt.

All diese Zutaten sind es, die die Beziehungen zwischen den Menschen aufbauen. Ein Kuss ist in erster Linie eine Übertragung von Informationen und eine Möglichkeit, das Bedürfnis des anderen nach Liebe zu stillen. Das Verlangen, mit Worten, Zärtlichkeiten, Blicken, Düften und Visionen zu füttern oder gefüttert zu werden, sind die starken Verbindungen, die Liebe und Vergnügen schaffen und beleben.

Alethea&Art Magazine: Können Sie mir Ihre jeweiligen Inspirationen anhand eines Rezepts erläutern?
Francesco Cavallo: Jedes einzelne Rezept des Buches verbirgt in seiner Struktur Bedeutungen und Symbole. Die Wahl jedes einzelnen Wortes und die Position jedes einzelnen Kommas wurde sorgfältig durchdacht, um ein Gefühl von schwebender Sinnlichkeit zu schaffen. 

Alethea&Art Magazine: Wie hat Ihre Liebe zum Kochen begonnen?
Francesco Cavallo: Ich habe in meinen ersten Jahren mit dem Kochen begonnen und die Küche als die außergewöhnlichste Form des Geschichtenerzählens entdeckt.

Danach kam die Liebe zum Wort, zu Sprachen, Literaturen und zum Humor. Dieses Buch ist die Synthese all dieser Welten. 

Alethea&Art Magazine: Wie kam es zu Ihrer Verbindung mit der Illustratorin Susanna Spelta?
Francesco Cavallo: Als wir über die Art und Weise des Drucks und der Gestaltung des Buches entscheiden mussten, hatten wir mehrere Treffen mit meinem Verleger und dem Art Director. Ich wollte, dass mein Buch von einer Frau illustriert wird, die eine raffinierte Mischung aus Sinnlichkeit und Sinn für Humor hat. Wir begannen, die Websites der besten italienischen Buchillustratoren zu durchstöbern, und dabei fielen mir die Zeichnungen von Susanna Spelta ins Auge. Ich verliebte mich sofort in ihre Art, große, langbeinige, sinnliche Frauen darzustellen, die ihre Sinnlichkeit in eleganten und verwöhnten Gesten und Kleidern verstecken. Sie war definitiv die richtige Illustratorin. 

Eleganz und Stil sind das Ergebnis eines Weges, der nie endet.
Alethea&Art Magazine: Wie wichtig ist es für Sie, ein Leben mit Stil und Eleganz zu führen und welchen Stellenwert haben Kunst und Kultur in Ihrem Leben? 

Francesco Cavallo: Eleganz und Stil sind das Ergebnis eines Weges, der nie endet. Guter Geschmack, die Fähigkeit, Atmosphären zu schaffen, die richtigen Formen zu wählen, der perfekten Farbe und den perfekten Worten nachzujagen, ist eine Mischung aus persönlicher Sensibilität, Wissen und Respekt vor dem anderen.

Die Freude am Leben und daran, den Menschen, mit denen ich gerne magische Momente teile, ein harmonisches Umfeld zu bieten, ist mein stärkster Wille. Ich weiß nicht, ob Eleganz in meinem Leben wichtig ist, aber mit Sicherheit sind die Suche nach Schönheit, Harmonie und Sinn für Humor die Schlüssel meiner Existenz.
